Quick Fix: Broccoli Rabe and White Bean Pasta
Dinner hath its stages
On nights that I start cooking before I start thinking, I tend to back myself into a corner. Like recently, when I came home and decided to make whole wheat pasta with broccoli rabe and beans for dinner. Leo doesn’t like broccoli rabe, or any beans other than black beans (about 3, on a mound of white rice).
So I boiled water, sautéed an onion, and created a recipe that involved first cooking broccoli, then broccoli rabe, then pasta in the same big pot of water. It also involved making a tasty, mild tomato sauce, some of which got tossed with pasta and butter for Leo. The rest, I tossed with pasta, white beans, broccoli rabe, chili flakes and feta cheese for us.
There you have it, two healthy, tasty, similar meals in one recipe, and everyone in the family was happy. If only I was always this good under pressure!
