These drinks are a healthy riff on everyone's favorite mojito cocktail.
Summer's here! Time for barefoot feet in the sand, lazy days by the pool, a frosty frozen cocktail in your hand... You might be thinking, "Sigh. Not till next summer for me," but hold on! Just because you may not be consuming alcohol while expecting doesn't mean you don't deserve a fun umbrella drink too. (Actually, you might deserve one more for being pregnant over the summer!)
I've got a super fun mocktail recipe for you. These Frozen Watermelon Mojitos are a refreshing and sneakily healthy riff on everyone's favorite mojito cocktail. Fresh watermelon, lime and mint combine in a delicious frozen treat that's perfect for a hot afternoon.
Throwing a party this summer? These babies are easy to adjust from "Mock to Not." Make a separate boozy batch for guests to enjoy (or go for real rum when the baby arrives and you want to celebrate.) They also happen to be a great way to use up leftover watermelon. After a summer gathering I puree and keep some at the ready in ice cube trays for a sweet and slushy treat anytime.
You'll be doing yourself and your guests a health favor by serving these instead of standard frozen drinks too. They get most of their sweetness from watermelon vs. sugar-bomb drink mixes and offer additional health benefits from watermelon. Didn't know watermelon was good-for-you? Check this out:
Not only is watermelon a perfect way to satisfy your sweet tooth; its 92% water content will help keep you hydrated and feeling full. It's also a sneaky source of antioxidants. Each 2 cup serving weighs in at only 90 calories and provides approximately 35% of your daily vitamin A and 45% of your daily vitamin C.
Another little known fact: watermelon surprisingly contains higher levels of lycopene than any other fresh fruit or vegetable. Lycopene is the pigment that gives tomatoes, watermelon and pink grapefruit their red color and is beneficial for cardiovascular health.
So get in on the fun and go for it mama—you deserve an umbrella drink this summer too!
