Cucumber-Apple Salad

Cucumber-Apple Salad
This Recipe:

2 rounded tablespoons 2% Greek yogurt
1 rounded tablespoon regular or light mayonnaise
1 tablespoon minced freshly parsley
1/2 teaspoon honey
4 medium (preferably Persian) cucumbers, about 3/4 pound, peeled and thickly sliced
1 crisp, sweet apple (such as Pink Lady), cored and cut into 1/2-inch pieces
Salt and freshly ground pepper, to taste


In a medium bowl, stir together the yogurt, mayonnaise, parsley and honey. Add the cucumbers and apple, toss to coat, then season with salt and pepper to taste.
