2 Kiwano (African horned) melons, halved lengthwise, flesh scooped out
3/4 cup fresh lychee or rambutan, peeled and seeded (or use canned)
3/4 cup seedless watermelon, chopped
3/4 cup green seedless grapes
3/4 cup pineapple chunks
3 tablespoons lime juice
1 tablespoon sugar
Combine lychee, watermelon, grapes and pineapple in a medium bowl. Stir lime and sugar together in a small bowl and pour over fruit. Toss gently. Place about 3/4 cup fruit mixture in each Kiwano shell. Garnish with mint leaves or chopped macadamia nuts, if desired.
