2 cups 1% milk
1 cup quick-cook old-fashioned oats (not packaged instant)
½ cup canned pumpkin
1 apple, chopped
1 teaspoon cinnamon
½ teaspoon nutmeg
2 tablespoons pumpkin seeds, shelled
2 tablespoons raisins
1 tablespoon maple syrup
In a medium saucepan, bring milk and salt to a slight boil over medium-high heat. Stir in oats, reduce heat and simmer, covered, for 2-3 minutes. Mix in pumpkin, apple, cinnamon, nutmeg, pumpkin seeds and raisins and cook for 3-5 minutes or until desired consistency. Drizzle with maple syrup before serving.
