Ingredients:


For dressing
    1     tablespoon low-sodium
        soy sauce
    2     tablespoons peanut butter
    1     tablespoon tahini
(sesame paste)
    1⁄4     cup hot water
    1     tablespoon lime juice
    1     tablespoon orange juice
    1     teaspoon honey
        Tabasco, to taste

For salad
    8     ounces (1⁄2 pound) buck-wheat soba noodles
    1     cup shredded carrots
    1     cup red bell pepper strips
    1     cup snow peas, rinsed,
ends trimmed
    1⁄2     cup chopped scallions, green parts only
    4     teaspoons chopped
roasted peanuts
    4     tablespoons chopped cilantro

Directions:

Place dressing ingredients in a blender or food processor and blend until smooth. If mixture is too thick, thin with additional hot water, adding 1 tablespoon at a time. Set aside.
Prepare noodles according to package directions, rinse with cold water and drain. In a large bowl, toss noodles with dressing and carrots, red pepper, snow peas and scallions. Divide among four plates and garnish each with 1 teaspoon peanuts and 1 tablespoon chopped cilantro.
