Ingredients:

2 large cucumbers, peeled and cut into bite-size chunks
1 medium yellow tomato, cored and cut into bite-size chunks
1/2 red bell pepper, cored, seeded and cut into bite-size chunks
2 green Turkish peppers or 1 Italian frying pepper, cored, seeded and cut into bite-size chunks
1 tablespoon finely sliced red onion
1 tablespoon chopped parsley
1 tablespoon olive oil
1 1/2 teaspoons red wine vinegar
Salt and pepper to taste
Pinch sugar if needed
 

Directions:

Combine all the ingredients on a platter, toss well, and season to taste with salt, pepper and sugar.
