rounded tablespoons 2% Greek yogurt
rounded tablespoon regular or light mayonnaise
minced freshly parsley
medium (preferably Persian) cucumbers, about 3/4 pound, peeled and thickly sliced
crisp, sweet apple (such as Pink Lady), cored and cut into 1/2-inch pieces
Salt and freshly ground pepper, to taste
1. In a medium bowl, stir together the yogurt, mayonnaise, parsley and honey. Add the cucumbers and apple, toss to coat, then season with salt and pepper to taste.
