Pineapple Salsa

Ingredients

  • 3 cups diced fresh pineapple
  • 1/2 cup tomato salsa (medium or hot)
  • 1/4 cup diced Vidalia onion
  • 1 sliced scallion
  • Juice of 1/2 lime
  • 1 tablespoon sliced fresh mint leaves
  • 1 bag baked tortilla chips, for serving

Make It

1. Combine the salsa ingredients in a bowl. Serve with the chips. Salsa can be refrigerated for 1 day.
