Homemade Whole Wheat Buns

Recipe ingredients

4 teaspoons dry active yeast

1/2 cup milk, warm to the touch

1/2 teaspoon sugar

2 1/2 cups whole wheat flour

1 cup all-purpose flour, plus additional as needed

2 tablespoons unsalted butter, melted

2 tablespoons honey

1 1/2 teaspoons salt

Egg wash: 1 egg beaten with 1 tablespoon water

Sesame seeds or rolled oats, for sprinkling (optional)

Recipe directions

1.  In a medium bowl, sprinkle the yeast over the warm milk. Add the sugar and let sit until foamy.

2.  Stir 1 cup of water into the yeast mixture. Add the flours, melted butter, honey and salt and stir until a dough forms and pulls away from the bowl. Cover with a cloth and let rise in a warm, draft-free spot until doubled in bulk, about 1 hour.

3.  Scrape the dough onto a floured surface and cut it into 12 equal pieces. Gently form the pieces into rounds and place them, evenly spaced, on a baking sheet. Cover with a cloth and let rise for 20 minutes.

4.  Meanwhile, preheat the oven to 400˚F. Brush the buns with the egg wash and sprinkle each with a pinch of sesame seeds or oats if desired. Bake until the buns are nicely browned and sound hollow when tapped on the bottom, 25 to 30 minutes. Serve warm or toasted.
