Cherimoya Waffles with Island Syrup

1 1/2 cups self-rising flour
1 tablespoon sugar
1/2 cup quick-cooking oats, uncooked
2 eggs
1 1/2 cups milk
1/3 cup vegetable oil or melted butter
2 cherimoyas, peeled, seeded and chopped (about 3/4 cup)
Island Syrup (YieldS about 2 1/4 cups, about 1/3 cup per serving)
3/4 cup maple syrup
1/4 cup half-and-half
1/4 cup papaya, peeled, seeded and chopped
1 red banana, peeled and chopped
1/2 cup fresh blueberries
Waffles
Preheat waffle iron and coat in nonstick spray. Combineflour, sugar and oats in a medium bowl. Mix in eggs, milk and oil. Stir in all but 1/4 cup of cherimoya, reserving the remainder for syrup. Bake according to waffle iron instructions, about 5 minutes. Top with Island Syrup. Makes 12 4-inch waffles (2 per serving).
Syrup:
Combine syrup and half-and-half in a small saucepan over medium-low heat. Add reserved cherimoya and remaining fruit and stir gently until heated through but not bubbling, about 6 minutes.
