Asian Cabbage Salad

1/2 pound canned green beans1 cucumber, thinly sliced1 1-pound bag shredded coleslaw mix1 cup pre-cut diced tomatoes1 1-pound cooked medium shrimp, shelled and deveinedPeanut dressing:3 tablespoons peanut butter1 tablespoon honey1/2 cup orange juice3 tablespoons soy sauce1/4 teaspoon hot chili oil1/2 teaspoon minced fresh ginger1/2 teaspoon minced fresh garlic
For salad, toss beans, cucumber, coleslaw mix and tomatoes in a large bowl. In a medium bowl, whisk dressing ingredients. Before serving, toss salad mixture with dressing and place shrimp on top. Serve cold or at room temperature.
