Hot Ginger Lemonade

PREP TIME: 5 minutes
COOK TIME: 20 minutes

Ingredients:

3 1/2 cups water
1/4 cup coarsely chopped fresh ginger (rinsed, but unpeeled)
1 cup fresh lemon juice
1/4 cup honey

Directions:

Place water and ginger in a saucepan over high heat and bring to a boil. Turn off heat, cover and steep for 20 minutes. Strain, discarding ginger. Return liquid to pan, add lemon juice and honey and heat briefly. Serve hot.
