PREP TIME: 5 minutes COOK TIME: 23 minutes Ingredients:1 knob unpeeled raw ginger (about 3-4 inches), scrubbed and cut into 1/4-inch slices |
Directions:Place ginger and lime juice in a small saucepan over high heat and bring to a boil. Cook uncovered until juice is reduced by one-fourth, about 2 to 3 minutes. Remove from heat, cover pan and allow ginger to steep for 20 minutes. Strain liquid and discard ginger. Stir in honey; place syrup in a glass jar and refrigerate until ready to use. |
