Cabbage Curry

  • 1 tablespoon vegetable oil
  • 1/2 onion, thinly sliced
  • 1/2 teaspoon cumin seeds
  • 1/2 large cabbage, cored, quartered and sliced
  • 1/2 teaspoon salt
  • 1/4 teaspoon turmeric
  • 2 tablespoons coconut milk
  • Lime juice, to taste
  • Black pepper
  • Basmati rice, for serving

Make It

1. In a wide saucepan over medium heat, warm the oil. Add the onion and cumin seeds and cook, stirring occasionally, until the onion begins to brown, about 8 minutes.

2. Add the cabbage, salt and turmeric and raise the heat to medium-high. Cook, stirring, until the cabbage wilts, about 5 minutes.

3. Add the coconut milk and simmer until the liquid has thickened, about 2 minutes. Season with lime and pepper to taste. Serve over basmati rice.
