Cherimoya Waffles with Island Syrup

  • 1 1/2 cups self-rising flour
  • 1 tablespoon sugar
  • 1/2 cup quick-cooking oats, uncooked
  • 2 eggs
  • 1 1/2 cups milk
  • 1/3 cup vegetable oil or melted butter
  • 2 cherimoyas, peeled, seeded and chopped (about cup)
Island Syrup:
  • 3/4 cup maple syrup
  • 1/4 cup half-and-half
  • 1/4 cup papaya, peeled, seeded and chopped
  • 1 red banana, peeled and chopped
  • 1/2 cup fresh blueberries

Make It


1. Preheat waffle iron and coat in nonstick spray. Combineflour, sugar and oats in a medium bowl. Mix in eggs, milk and oil. Stir in all but 1/4 cup of cherimoya, reserving the remainder for syrup. Bake according to waffle iron instructions, about 5 minutes. Top with Island Syrup. Makes 12 4-inch waffles (2 per serving).


2. Combine syrup and half-and-half in a small saucepan over medium-low heat. Add reserved cherimoya and remaining fruit and stir gently until heated through but not bubbling, about 6 minutes.
