Cucumber-Apple Salad

  • 2 rounded tablespoons 2% Greek yogurt
  • 1 rounded tablespoon regular or light mayonnaise
  • 1 tablespoon minced freshly parsley
  • 1/2 teaspoon honey
  • 4 medium (preferably Persian) cucumbers, about 3/4 pound, peeled and thickly sliced
  • 1 crisp, sweet apple (such as Pink Lady), cored and cut into 1/2-inch pieces
  • Salt and freshly ground pepper, to taste

Make It

1. In a medium bowl, stir together the yogurt, mayonnaise, parsley and honey. Add the cucumbers and apple, toss to coat, then season with salt and pepper to taste.
