Cucumber-Apple Salad

Servings: 3
Ingredients
- 2 rounded tablespoons 2% Greek yogurt
- 1 rounded tablespoon regular or light mayonnaise
- 1 tablespoon minced freshly parsley
- 1/2 teaspoon honey
- 4 medium (preferably Persian) cucumbers, about 3/4 pound, peeled and thickly sliced
- 1 crisp, sweet apple (such as Pink Lady), cored and cut into 1/2-inch pieces
- Salt and freshly ground pepper, to taste
Make It
1. In a medium bowl, stir together the yogurt, mayonnaise, parsley and honey. Add the cucumbers and apple, toss to coat, then season with salt and pepper to taste.
