Spicy Asian Noodles

For dressing:
  • 1 tablespoon low-sodium soy sauce
  • 2 tablespoons peanut butter
  • 1 tablespoon tahini (sesame paste)
  • 1/4 cup hot water
  • 1 tablespoon lime juice
  • 1 tablespoon orange juice
  • 1 teaspoon honey
  • Tabasco, to taste
For salad:
  • 8 cups (1/2 pound) buck-wheat soba noodles
  • 1 cup shredded carrots
  • 1 cup red bell pepper strips
  • 1 cup snow peas, rinsed, ends trimmed
  • 1/2 cup chopped scallions, green parts only
  • 4 teaspoons chopped roasted peanuts
  • 4 tablespoons chopped cilantro

Make It

1. Place dressing ingredients in a blender or food processor and blend until smooth. If mixture is too thick, thin with additional hot water, adding 1 tablespoon at a time. Set aside. Prepare noodles according to package directions, rinse with cold water and drain. In a large bowl, toss noodles with dressing and carrots, red pepper, snow peas and scallions. Divide among four plates and garnish each with 1 teaspoon peanuts and 1 tablespoon chopped cilantro.
