Thai Shrimp Salad

  • 4 cups shredded cabbage and carrot mix
  • 1 pound shrimp, peeled and cooked
  • 1 cup fresh pineapple, diced
  • 1/2 cup fresh cilantro, chopped
  • 2 1/2 tablespoons rice vinegar
  • 2 tablespoons sugar
  • 2 tablespoons fish sauce
  • 1/2 teaspoon chili paste
  • 1/3 cup roasted peanuts, chopped

Make It

1. Combine shredded cabbage and carrot mix, shrimp, pineapple and cilantro in a large bowl. Stir together next four ingredients (rice vinegar, sugar, fish sauce and chili paste) in a small bowl. Pour over salad, add roasted peanuts and toss thoroughly to mix.
