Turkish Salad
Servings: 2 to 4

Ingredients

  • 2 large cucumbers, peeled and cut into bite-size chunks
  • 1 medium yellow tomato, cored and cut into bite-size chunks
  • 1/2 red bell pepper, cored, seeded and cut into bite-size chunks
  • 2 green Turkish peppers or 1 Italian frying pepper, cored, seeded and cut into bite-size chunks
  • 1 tablespoon finely sliced red onion
  • 1 tablespoon chopped parsley
  • 1 tablespoon olive oil
  • 1 1/2 teaspoons red wine vinegar
  • Salt and pepper to taste
  • Pinch sugar if needed

Make It

1. Combine all the ingredients on a platter, toss well, and season to taste with salt, pepper and sugar.
